Don’t call me a mean girl, but I really don’t like turkey or beef meatloaf. My mom made it back in the day, just like everyone else did, with ground beef and ketchup on the top.
I’m not sure how it’s comfort food and why people like it.
I would much prefer just a burger!
All these years later, I’m still not a fan.
However, my husband is.
As a compromise, I make turkey mini-meatloaf “muffins” in my muffin tin, rather than a big hunk of meatloaf in the oven, like my mom did.
The method is basically the same, only smaller!
Turkey Mini-Meatloaf “Muffins” Prep:
Start with a pound of ground turkey. As you know, it’s healthier than beef.

Add to it an egg, some breadcrumbs and spices, and mix thoroughly.
Shape the mixture into balls that are roughly a tad bit smaller than your muffin tin indention.
I can usually make 9 or 10 of them.
In a nod to my mom’s version, I happily squeeze a dollop of ketchup on top.
Bake in a 375-degree oven for about 20 minutes.
These babies are fabulous paired with my marinated green beans and easy, cheesy potatoes.
These are great for game day, too!
In a smaller portion size, with leaner meat, perhaps I could learn to love the meatloaf. I’ll keep you posted on that!
- 1 lb. ground turkey
- 1 egg
- 1/2 c. bread crumbs
- 1 t. garlic powder
- 1 t. onion flakes
- 1/2 t. pepper
- 1/4 t. salt
- 1 t. parsley
- Mix all ingredients and form into balls that would almost fill the muffin tin indention.
- Pour ketchup on top.
- Bake in a 375 degree oven for 20 minutes.
- Makes 9 - 10 mini-meatloaf "muffins"
