Almost everyone at some point will need a special occasion dinner menu they can purchase and use quickly, whether it’s for an impromptu party or for guests who drop in with very little notice.

This year, the contractor we hired to renovate two of our bathrooms announced he would be starting the demo the week of Easter.

I told him he had to have the guest bath finished by Easter, because I was having 12 people in my home for dinner after church. He said that wouldn’t be a problem, and it wasn’t.

However, with my house in varying levels of drywall dust and general chaos, I didn’t have a lot of motivation to be in the kitchen.

What I really wanted to do was clean as thoroughly as I could when they left on Saturday afternoon!

With that in mind, I went to the grocery on Friday and purchased several items that could be easily and quickly prepared for Easter dinner.

•Yeast Rolls 

I bought two large bags of cooked shrimp and used cocktail sauce I had on hand.

Packaged mac and cheese is always a hit and fast to make.

My daughter made both the Tomato-Cucumber Salad and Cranberry-Pineapple Jello after the crew left on Saturday. (Find both recipes here and here.)

I purchased premade guacamole and used Tortilla Chips I had on hand; the rolls were already in my freezer. 

Special Occasion Dinner Menu Add-ons:

My guests each brought food, too, so we also had:

•Baked beans

•Veggie Pasta Salad

•Meat/CheeseCracker Platter

•Snickers Apple Salad

No one seemed to mind that my home was not (almost) spotless, as it usually is!

Nor did anyone mind that our menu was slightly unusual and eclectic.

All in all, it was a fabulous day where the food wasn’t necessarily the center of attention, but was still amazing.
