Who loves guacamole? Who wants a super-easy guacamole recipe?
I’m a huge fan of good guacamole, but I think it’s really hard to find.
The store-bought versions, including some leading national brands, don’t cut it with me.
Chipotle’s version, I love, but we don’t live that close to a restaurant, so eating it on a regular basis is not possible.
What’s a picky guac lover to do?
Make her own, of course!

Super-Easy Guacamole Recipe
Take six avocados, pull out the pits, scoop out the insides, and put it into a food processor.
I have a mini-food processor, so I had to do this several times.
Once the mixture has been pureed, set aside.
Chop 1 tomato and 1/4 of a white onion into bite-sized pieces and add to the avocado mixture.
To that, add a pinch of salt and the juice from one lime. If you like cilantro, add to desired taste. I used about 3 sprigs.
Beautiful and tasty!
If you have leftovers, the guac will turn dark. Here’s how to bring it back to a vibrant green again.
Add more lime juice and stir thoroughly.
Enjoy with chips or on a black bean or veggie burger!
