Broccoli-Cheese Casserole [2 Ways]

Broccoli-Cheese Casserole is a staple for potlucks, reunions, or holiday meals because it’s so cheesy delicious, right?! 

Of course!

Over the years, however, I’ve become more picky about which foods I’ll purchase and prepare for my family.

Having said that, I’m not above eating junk food or food that’s prepared in unhealthy ways!In fact, I love both naughty food types.

Izabel and I both make and Broccoli-Cheese Casserole, but we do it in a slightly different way. 

Izabel goes full on with more cheese and butter and less broccoli than I do, and it’s indescribably delicious!

In fact, she’s brought it to my home for get-togethers, including our Book Club meetings!

I took Izabel’s recipe below and changed it up to make it healthier; by the way, it’s delicious this way, too. You get to choose which version to make and enjoy!

 

 Izabel’s Super Easy Broccoli-Cheese Casserole:

Ingredients:

1 stalk of broccoli
Velveeta Cheese or Cheese of choice
1 stick Butter or Margarine
1 large sleeve of Ritz Crackers or Crackers of choice

Directions:

-Cut Broccoli into small pieces
-Put into pan and cover with water
-Boil until tender
-Drain Broccoli and put into an 8 x 8 baking dish
-Mash Broccoli with a fork in bottom of baking dish
-Cover with cheese
-Melt stick of butter/margarine in pan over low heat
-When melted, remove from heat
-Add large sleeve of crumbled crackers to melted butter/margarine mixture
-Stir until crumbled crackers are covered with the melted butter/margarine mixture
-Take crumbled cracker mixture and spread over the top of the Broccoli and cheese.

Bake @ 350 for approximately 20-25 minutes or until the top is browned and the cheese is melted.
Serves approximately 4-6.

 

Emily’s Version:

1 package of fresh organic chopped broccoli 

1 cube of Velveeta Mini Blocks cheese

3/4 stick of melted butter

1 sleeve of Ritz Whole Wheat crackers

Directions:

•Place broccoli in a steamer basket in a pan lightly filled with water and steam until tender and still green.

•Mash broccoli in the steamer pan and transfer to baking dish, which has been sprayed with non-stick cooking spray.

•Add cheese to top of broccoli, breaking it into similar-sized pieces.

•Melt butter in a microwave-safe dish and add in the crushed crackers.

•Stir crackers and then add to the top of the cheese

Bake @ 350 for approximately 20-25 minutes or until the top is browned and the cheese is melted.
Serves approximately 4-6.

Broccoli-Cheese Casserole is a rock star in the word of side dishes! No matter how it’s fixed, with less butter, more broccoli, added rice, whatever, it’s going to be delicious!
