Baked Beans (Summer Side)



It’s summertime – yay! – and backyard BBQ’s are in full-swing.

What better to accompany a burger, dog, or chicken than a steaming dish of hearty baked beans?

My recipe is so simple you’ll be out of the kitchen in a flash.


Easy Prep:

Take two cans of your favorite baked beans and empty them into a casserole dish that’s been sprayed with non-stick cooking spray.

Add in a mixture of sliced peppers. I purchase a frozen bag of tricolor peppers from Trader Joe’s specifically for my baked beans.

I use about half of the bag.

Add to that a sliced onion, if you prefer, or do what I do and add a handful of diced onions.

Finish with a tablespoon of a seasoning mix; I use Trader Joe’s 21 Seasoning Salute.

Feel free to use your favorite mix.

Combine all the ingredients and bake in a 375 degree oven for 30 minutes.

Beautiful, right?

I love adding the peppers for both flavor and nutrition. Plus, it just looks lovely.

Wouldn’t it be festive as a side for the holiday season? I would be the one to pick out the yellow ones! Truly.
